Why am I buying unfilleted fish?

I am trying to craft and profit from pijic Ambrosias. The market value of roe is so high that it's near impossible to profit from it.

Why would you sell your fish?

The unfilleted fish are a gamble/risk you take, while you could fillet many fish and obtain no roe I would buy the risk from you, insuring for your self a gurenteed profit.
